Summer fruit Tarts & Pies


A tart is a baked dish consisting of a filling over a pastry base with an open top not covered with pastry. The pastry is usually shortcrust pastry; the filling may be sweet or savoury, though modern tarts are usually fruit-based, sometimes with custard. Tartlet refers to a miniature tart; an example would be egg tarts. The categories of "tart", "flan", "quiche", and "pie" overlap, with no sharp distinctions.


A pie is a baked dish which is usually made of a pastry dough casing that contains a filling of various sweet or savoury ingredients. Sweet pies may be filled with fruit (as in an apple pie), nuts (pecan pie), fruit preserves (jam tart), brown sugar (sugar pie), sweetened vegetables (rhubarb pie), or with thicker fillings based on eggs and dairy (as in custard pie and cream pie). Savoury pies may be filled with meat (as in a steak pie or a Jamaican patty), eggs and cheese (such as quiches or flans) or a mixture of meat and vegetables (pot pie).


We are currently in the midst of the high season for berries, hence the blog. To keep it short and simple, I'm sharing a few essential recipes for the making of summer fruit tarts...maybe a pie recipe or two as well!
